Job Description

We are seeking a talented and experienced Sous Chef to join our culinary team at our luxury resort in {NAME}, Maldives. As the second-in-command in our kitchen, you will play a crucial role in maintaining our high standards of culinary excellence while embracing the unique flavours and ingredients of our tropical island setting.

  • Assist the Executive Chef in overseeing daily kitchen operations, ensuring efficiency and maintaining quality standards
  • Collaborate with the culinary team to develop innovative menus that showcase local and international cuisines
  • Supervise and mentor kitchen staff, fostering a positive and collaborative work environment
  • Ensure compliance with food safety regulations and maintain the highest standards of hygiene and cleanliness
  • Manage inventory, control costs, and minimise waste while maintaining quality
  • Participate in menu planning, considering seasonality and availability of local ingredients
  • Assist in the preparation and presentation of dishes during service times
  • Coordinate with other departments to ensure smooth kitchen operations and guest satisfaction
  • Contribute to the continuous improvement of culinary offerings and kitchen processes
  • Step in for the Executive Chef when necessary, demonstrating leadership and decision-making skills

Qualifications

  • Minimum of 3 years' experience in the hotel industry, preferably in luxury resorts or remote island locations
  • At least 1 year of professional experience in a similar Sous Chef position
  • Middle or Secondary Education with additional training or certificates in culinary arts
  • Valid food handler certificate (mandatory)
  • Demonstrated culinary expertise and creativity, with knowledge of various cuisines and cooking techniques
  • Strong organisational skills and meticulous attention to detail
  • Excellent leadership and team management abilities
  • Proficiency in menu planning, cost control, and inventory management
  • Outstanding communication skills and ability to work collaboratively in a diverse team
  • Thorough knowledge of food safety regulations and best practices
  • Ability to thrive in a fast-paced, high-pressure environment
  • Flexibility to adapt to the unique challenges of a remote island setting
  • Passion for continuous learning and staying updated with culinary trends
  • Proficiency in English; knowledge of additional languages is an advantage
