Job Description
The Sous Chef Manager of Central Kitchen supervises and coordinates the production of high-quality, authentic Italian ingredients and dishes in one of Eataly’s exciting, high-volume kitchens. The Manager is a focused and hands-on leader, not only maintaining food quality standards, but also passionately training and inspiring team members at all levels about Eataly’s products and services.
Reports to the Chef de Cuisine and manages a team of prep cooks.
- Supervises and coordinates activities related to food preparation, kitchen, and storage areas
- Orders and organizes all raw ingredients and prepared items promptly and accurately
- Adheres to the production schedule by determining the needs of various outlets in the store and collaborating with the kitchen management team
- Manages food production and takes active ownership of an exceptional degree of consistency and quality of every batch-recipe prepared
- Hires, trains, and works alongside cooks to ensure quality, speed, safety, and health standards are consistently met
- Requisitions and apportions food items and utilizes food surpluses to control food costs
- Assists with scheduling and payroll processing as requested
- Documents, investigates, escalates, and resolves employee or guest incidents
- Performs other duties as required or assigned
Qualifications
- 3+ years of back of house experience, including 1+ years of management experience
- Good communication skills
- Excellent knife skills and finger dexterity to use small tools and utensils adeptly
- Advanced computer skills
- Bachelor’s Degree or degree from post-secondary culinary arts program preferred
Job Requirements
- Availability to work onsite with a flexible schedule often including evenings, weekends, and holidays
- Ability to lift up to 50 pounds
- Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending, and squatting
- Ability to work with commercial equipment including meat band saws, stand mixers, ovens, torches, etc.
Additional Information
Compensation: The yearly compensation for this role is $60,000 - $70,000.
