Job Description

Role Summary

Reporting to the Chef or catering cook, the prep cook is responsible for the safe preparation, and storage of mise-en-place items. Prep cooks are also responsible for receiving and putting away orders, maintaining cooler and storage room organization and participating in dishwashing.

All staff are also responsible for participating in light clean-up of the bistro (clearing buffet and tables) and atrium.

Responsibilities

· Safely prepare and mise-en-place and cold appetizers including but not limited to: deli platters, vegetable platters, raw meats, salads, and vegetables

· Maintain kitchen and food prep areas in a tidy, organized and clean fashion

· Sanitize and clean equipment with appropriate cleaning products throughout the shift and as directed

· Support the catering and line cooks with prep and buffet setup as needed

· Follow the nightly closing checklist at the end of the day

· Follows HAACP directions and maintains proper cooler organization (raw meats and seafoods below ready to eat products, no food containers stored on the floor)

· Ensures dishwasher chemicals are stocked and notifies the chef when they need to be ordered

· Records and monitors dishwasher and sanitizer concentration levels

· Other duties may be assigned as required.

Qualifications

Qualifications, Skills & Experience:

· Foodsafe Level 1 certification preferred

· Good presentation and personal hygiene

· Basic knife skills

· 1 or more years experience as a cook in a professional environment.

· Must be available evenings and weekends as needed.

· Able to work in a standing position for long periods of times.

· Able to lift 20-30 lbs

· Able to communicate clearly and effectively

· Able to follow instructions and work off of a checklist

· Sense of personal responsibility for delivering catering menus as outlined and on time
