Job Description

SUMMARY:

The Food and Beverage Director is responsible for all dining and beverage services within the company.  This position is directly responsible to ensure excellence for the F&B division in relation to the following: guest satisfaction, employee performance, training, staff development and revenue growth. 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

•    Responsible for overall operations of all dining and beverage activities, including but not limited to the Dining Hall, Granby Ranch Grill, 8350 Member Lounge, Outdoor Barbeque, Golf Grill and related golf food and beverage services, Special Events, Weddings and Banquets.
•    Interview, hire, evaluate, reward and discipline F&B personnel.
•    Orientate, motivate, train, and educate all F&B personnel in Granby Ranch’s policies, procedures and rules.
•    Evaluate performance for all staff members regularly, including disciplinary action as needed.
•    Review and approve all staff schedules, including shift change requests.
•    Complete proper paperwork and reporting as required by operations, human resources and legal regulations.
•    Effectively supervise floor staff and dining managers to ensure professional service and guest satisfaction during hours of operation.
•    Conduct daily line up meetings (oversee continued evolution of line-up meetings). Educate front of the house personnel in product awareness and cultivate long-term service knowledge.
•    Build rapport with Granby Ranch’s guests and members and ensure an enjoyable and memorable experience.
•    Develop and manage budgets for all F&B operations.
•    Manage and submit daily accounting reports.
•    Maintain security for all monetary exchanges, bank deposits, etc.
•    Manage and monitor inventories including ordering, receiving, and cost control.
•    Maintain food and beverage quality and preparation, timeliness, appearance, portions, temperature and presentation.
•    Develop menus, pricing and signage for all food and beverage locations.
•    Oversee discount and promotion program both from the service perspective and the guest perspective.
•    Establish open lines of communication between front of the house and back of the house at all times.
•    Establish role as a spokesperson for the restaurant within the community and with Granby Ranch’s guests.
•    Maintain knowledge of local competition and general industry trends.
•    Manage staff safety procedures with the executive chef to minimize work related injuries.
•    Maintain strong knowledge of Colorado State Health Codes and Liquor Codes, ensure standards are met and enforced regularly.

OTHER DUTIES AND RESPONSIBILITIES:

•    Work well with other departments and staff members, providing assistance and support as needed.
•    Constantly develop staff in food and wine knowledge as well as service.
•    Foster a culture in which customer satisfaction is the primary concern.
•    Handle all customer and miscellaneous situations in a professional and timely manner.
•    Research and carry out ways to improve the food and beverage operations.
•    Contact and maintain relationship with vendors and sponsors for promotions and donations.
•    Complete other duties as assigned.
•    Prepare and execute all weekly FOH Director’s meetings .
•    Communicate all special events, parties, and occupancy levels during the Manager's Meetings.
•    Maintain the wine list and conduct tasting and other training sessions for the staff.

Employees are held accountable for all duties of this job.

SUPERVISORY DUTIES:
•    Supervise all food and beverage staff members.


Qualifications

Knowledge, Skills & Ability:
•    Ability to work in any area of the food and beverage operation as needed.
•    Strong oral and written communication skills.
•    Ability to maintain and friendly, helpful attitude to all guests and fellow employees.
•    Dependable, flexible and able to work varied shifts.
•    Ability to teach and give direction.
•    Ability to receive direction and feedback.
•    Knowledge of Colorado State Health Codes and Liquor Laws.
•    Ability to analyze and formulate food cost percentages and yield analyses.  
Education or Formal Training:
•    Must be at least 21 years of age with a valid driver license.
•    Five to Eight (5-8) years experience in a supervisory role.
•    Five to Eight (5-8) years of restaurant experience in both back of house and front of house roles.
Experience:
•    Working knowledge of Microsoft programs including, but not limited to, Word, Excel and Publisher.
•    Must have experience using a cash register, credit card machine, and back of house food and beverage equipment.
•    Experience working within a budget.
Working Environment:
•    Both indoor and outdoor work required in a mountain environment with variable weather conditions.
•    Variable shifts with potential long work hours to support food and beverage business.
•    Fast-paced environment with high customer service levels expected.
Physical Activities:
•    Must be able to stand for long periods of time.
•    Must be able to lift and carry 30 pounds or more.
•    Must be able to withstand extreme temperatures and variable weather conditions outdoors.
•    Standing, Bending, Lifting, Walking, Carrying.
